More Diet Changes on the way

Well, it has been more than a year since going gluten-free, and I have to say my health and symptoms have improved. Unfortunately, I can't say that I am back to feeling 100% yet, actually I don't even know if I have ever felt 100%. I am able to get through most working days without a problem, and I have days where I have enough energy to do some form of exercise or activity. Some days, I have constant a stomachache and just want to come home and lie in bed. I have made a lot of progress since everything started about 5 years ago.  I will continue to make changes until I feel 100%, no matter what it takes, because it doesn't matter what I have to eat or do, it won't compare to the feeling I will have when I no longer have a stomachache, headache, or an anxiety!

I am writing this, because after all of the changes I have already made, I still don't feel well. I have been researching The Paleo Diet, and have watched Fat, Sick and Nearly Dead. These both seem like good avenues to take, only consuming fresh foods and more greens. I have started juicing, making 1 juice per day until I can start with a 3-day fast. The juice doesn't taste so bad and I thought my skin may be clearing up, but it could also just be my imagination.

There is so much more to update on but of course time is limited and I must get going...

Finally going GF for good!

Welcome friends, the purpose of this page is for me to document my experiences on this journey of going and staying gluten free. I plan on giving local (South Florida) restaurant reviews including the GF food they offer, knowledge of staff, preparation of food, price etc. I also travel to New Hampshire frequently, because that is where I am from originally and my family is still there, so I will be exploring GF places up there too.  

As many of you that have already gone gluten free know, you may have struggled with a diagnosis, I want to share my story as well.  And even though there are more places and people that are aware of gluten now, not everyone knows exactly what it is and how harmful it can be to a  gluten sensitive/allergic person. My goal is to spread gluten awareness and hopefully make a difference in the way doctors diagnose patients. Please join me in this journey to a more healthy and fulfilling life!!

Please share everything to restaurants,  store bought items, how they taste, cost etc, EVERYTHING pertaining to GLUTEN...symptoms, thoughts, feelings, doctors, exercise, what makes you feel better, EVERYTHING. Even tips and advice to make this process easier for us all!!

Since going GF on 3.29.11, I have found it hard and expensive to eat, but also feeling a bit better so far =) I have also been contaminated a few times too. I want you to share everything with me too!!! Even if you aren't GF, I am sure you know someone that is, and once you know what it is, you will start recognizing the term "gluten free".
